The Reggiana breed was almost extinct. A group of farmers took a couple of decades to bring it back. The original cow, native of Emiglia-Romagna, is now solely bred to produce milk for the manufacture of Vacche Rosse Parmigiano Reggiano. The milk, although produced in less quantity by the breed, has qualities that make outstanding cheese, able to age well over 40 months. Not the cheapest parm on the block, it is worth every penny.
