Smoked prosciutto (Speck) from the Südtirol or Alto Adige-Trentino, the northernmost region of Italy. Smoked cured ham, Speck is an extremely lean whole pork flank with a distinctive flavor. It can be served sliced thin on an antipasto platter or used to flavor bean soups, stews, and pasta sauces. A heritage of the time when Austria-Hungary ruled the land.
