This cheese is made in the green mountain valleys of the Tuscan-Emilian Appennines, it sports aromas, and flavors typical of mountain pastures and intense straw color, a product of the cows feeding on high altitude meadows hays, which also render it rich in Omega 3 and low in sodium.

Since 2005 Saliceto has renewed its breeding, adopting the "free housing" system to improve the animal's well-being. The cattle are no longer tied and are free to move, eat, rest in its bunks, without constraints and stress.
