Patatas bravas, so typical a Spanish tapa that it is recognized by the United Nations as one of the national dishes of Spain. Cubed irregularly, potatoes fried in olive oil and covered with a spicy sauce. Some prefer the sauce with tomato base, while others favor the one made purely with Spanish paprika. Born in Madrid around 1960 at Casa Pellico a very famous now-defunct tapas bar. In Barcelona we find a version served with aioli.
