First Katz pickles the meat for 3 weeks in their "secret brine solution". Then they spice up the outside of the meat (this is called "The Rub"..) The meat is then smoked for 3 days. Upon receipt in his kitchen, Chef Lippe boils the whole pastrami piece for 3 hours. followed by boiling in our kitchen for 3 hours. The pastrami is then carved by hand by Chef Lippe and promptly delivered. Don't you touch that Ketchup!
