Papas Rellenas - Stuffed Potatoes

Papas Rellenas is delicious comfort food, similar to mashed potato pancakes, but with a surprise ground beef center. popular all over Latin America, particularly in Cuba and the Andean region. Mashed potatoes are made into a ball with a hole in the middle, stuffed with ground meat, hard boiled eggs, raisins, and olives, then shut tight. They can be deep fried or oven baked until golden brown.
