Panang Chicken Curry. 

This velvety aromatic curry from Thailand carries dried chili peppers, galangal, lemongrass, kaffir lime leaves and zest, coriander root, coriander seeds, cumin seeds, garlic, shallots, shrimp paste, palm sugar, fish sauce, and coconut milk.  The dish is usually made with the meat cut into thin strips, with two versions available, the stir fry style quick version, and the slow simmer version. Chef Lippe executes the later. Panang curry first appeared in the Thai gastronomic universe around 1890 in Mom Somchin Rachanupraphan's book Tamra Kap Khao.
