Idiazabal DOP is a hard, sheep’s milk cheese from the Basque and Navarra regions of northern Spain. Idiazabal is ripened for a minimum of two months. It has a smooth, hard, natural rind that is amber in color. The flavor is buttery, nutty, and smoky due to the cheese being stored near burning wood pits.
