Hasselback potatoes were created in 1953 by Leif Ellison, a trainee chef at Hasselbacken restaurant on Djurgården, Stockholm.
Hasselback potatoes or Potato à la Hasselbacken (Swedish: Hasselbackspotatis) are a type of baked potato, where they are cut about halfway through into thin fan-like slices. As they bake, the thin potato slices open like a flower. It is between one slice and the next, that Chef Lippe drops cheese, or salami, or both.
