A secular tradition of Japanese cuisine, the cheekbone or cheek collar of the yellowtail fish is known for its luscious deep creamy consistency, contrasted with the crispness of the skin. When properly treated and prepared it is bar-none the best part of Hamachi. We recommend baking or broiling.
