Gilda is the quintessential Basque tapas pintxo. It is very simple, an olive, a pickled green chile a gherkin and anchovy filet on a wooden skewer. This tapa pintxo is to Basque what garlic is to the French. Its name Gilda is after the 1946 film noir starring Rita Hayworth. In the words of its creator Blas Vallés of Casa Vallés in San Sebastian, because it is green, salty and spicy, the implicit secondary meaning of "green" in Spanish being "pervy".
