Segovia, close to Madrid, is famous for its Roman aqueduct and also for its wonderful suckling pigs, or “cochinillos,” which many local establishments specialize in roasting to perfection.
It was near impossible to find Spanish cochinillos -100% milk-fed suckling pigs with a maximum weight of 12 pounds - in the US until now! So if you are a roasting enthusiast, please, try this out! Juicy on the inside and with a tender, crispy skin, it will take you on a gastronomic trek to Castilla.
