This spread is particularly addictive. You have been warned. Eat at your own risk. I take perfectly dried smoky Pasilla chiles, hydrate them, puree them and combine them with a blend of Mexican cheeses. Cotija, Fresco, and Oaxaca are usually in the mix, but Queso Blanco and other Mexican delicacies have been known to find their way to this spread. Pasilla Chile is the most flavorful and least spicy of all dried chiles out there. You can safely use it at gatherings, without fear of overpowering those who do not like the heat found in other chiles like jalapeño.
