Harissa is the quintessential North African condiment, kind of what ketchup is in America. My version is Tunisian. It includes preserved lemon, the main ingredients are roasted red peppers, Baklouti and Serrano peppers, spices and herbs, garlic paste, caraway seeds, coriander seeds, and cumin. I blend this mixture with cheese and a little bit of olive oil. It is to die for.
