Evreiskaya is a traditional eastern European dry-cured salami popular throughout Ukraine, Georgia, Estonia, the Balkans, Poland, and most of the former Soviet Union.
It is a compact, tasty salty treat that can be enjoyed as an appetizer sliced thin or cubed accompanied by olives, onions, and even ripe dates. As it is fully cured, like many other European types of meat like Italian prosciutto and Spanish Jamon, it does not require refrigeration. A good companion to a simple loaf of rustic bread and a glass of Georgian wine or followed by a shot of vodka it can also be used in stews and other culinary creations.
