Caponata is a medley of vegetables and spices popular in Sicily. Every nonna and cuoco has its own version. Sicilian caponata is a sweet and sour relish-like sauteed antipasto dish made with eggplant, tomatoes, onions, celery, capers, olives, herbs, and spices. I have seen cooks in Palermo incorporate sardines into their caponata, it is after all the popular fish of Sicily.
