A banderilla is a type of Spanish Tapas. It derives its name from the spades inserted in the hump of a bull during a bull run. There are as many variations of this appetizer as there are tapas cooks in Spain. This particular variation is a classic. "Boquerones" white anchovies caught off the coast of Morocco, marinated in vinegar and olive oil, embracing a green olive stuffed with "pimenton" red pepper.
